Are there any scenarios in which deferring a reminder would be useful (from the to do column)? I have not been able to think of a good example to train our physicians.

You wouldn't defer a reminder, you would defer an order. An example would be: a patient can't come in the day of their appointment where a medication had been ordered, that medication would then be deferred for a later date.
