Can I delete and remove old or unused orderable items from the EEHR?

No, is the answer. However, to get the unwanted orderables under control, you can inactivate them and move them to a parent class called something like “xxDoNotUse”. This way when people go into the dictionary they know not to make any adjustments to the orderable items under that class.
